Clothbound Cheddar is a rare tradition for American cheesemakers. It’s a process that requires equal parts quality ingredients, patience & alchemy. Fresh cheese is molded, wrapped in cloth bandages & dipped in butter made from the same milk that goes into the cheese vats. After a minimum of two years in a carefully controlled cave environment, Face Rock’s clothbound cheddar presents with a rich & exquisitely flakey texture that delivers a nutty, complex flavor.
Available Online in approximatly 1 lb or 1/2 lb wedges.

After 55 plus years in pursuit of fine Chedder , this is close to being one of the finest chedders I have found. Full flavor, but not too sharp, and firm and crumbly (not a contradiction) texture. Expect some slight inconstancies between rounds (results of the indivdual cloth wrapping I assume) but the basic fine qualities still hold. A round can become too firm sometimes, defying the best of cheese slicers. Yet still a delight.
